Squash Casserole with Stuffing

This recipe is a popular one in my family. With only 7 ingredients and an abundance of squash in season, this is a dish that is very easy to throw together on busy summer days.




Ingredients: 2 cups of cooked squash

1 onion, finely chopped

1 8-oz package Pepperidge Farm herb stuffing mix

1 egg

1/2 stick butter

1 can cream of chicken soup

1 8-oz container sour cream


Directions:

Preheat to 350.

Melt butter in 2 quart casserole dish (a 2 quart dish is a bit smaller than the traditional 9 x 13 size. Line sides and bottom of dish with dressing mix. Combine squash, onion, egg, soup, and sour cream. Pour in casserole dish and bake at 350 for approximately 35 minutes.
